Just trust me....it's yum!

Carmel Apple Cheesecake Bars with Streusel Topping

 2 cups flour

½ cup firmly packed brown sugar

1 cup butter softened

2 (8 ounce) package cream cheese softened enough to mix in

½ cup sugar  also, 2 T sugar  (used 2 places in the recipe)

2 large eggs

1 teaspoon vanilla

3 Granny Smith apples, peeled cored and finely chopped

 ½ tsp cinnamon

¼ tsp ground nutmeg

 

Directions:

 In a medium bowl, combine flour and brown sugar.  Cut in butter with a pastry blender until mixture is crumbly.  Press evenly into a 9 x 13 inch baking dish.  Bake 15 min or until lightly browned.

 

In a large bowl, beat cream cheese with ½ cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time and vanilla, stir to combine.  Pour over warm crust. 

 

In a small bowl, stir together chopped apples, remaining 2 T sugar, cinnamon and nutmeg.  Spoon evenly over cream cheese mixture.  Sprinkle evenly with streusel topping (see recipe below).

 

 Bake dessert 30 minutes or until filling is set.  

May drizzle with ½ cup carmel topping.

 

Streusel Topping:

 

1 cup firmly packed brown sugar

1 cup flour

½ cup quick cooking oats.

½ cup butter softened.

 

In a small bowl, combine ingredients. 

 

Serve with vanilla ice cream.  Very rich and delicious.

A "Favorite" Day.

Once a year the Bodily siblings meet.  What a joyful day it is!

I'm only an "inlaw", you know, but I get the privilege of viewing first hand the fruits of some mighty good parenting handiwork.

The moment the Bodilys get together, you feel a deep connecting love between them.  Years of being taught the gospel in their home,  shared childhood memories (this year we talked of Paul and the burning box) and the assurance that they have a Daddy Dale, I mean Del,  waiting for them in Heaven, weld this beautiful eternal family together. 

 Sweet little Alice continues to lead and counsel her family with Grandpa Ron  "stepping in" as her right hand man.

One thing you can count on when the Bodilys get together there will be some mighty  good talkin', (about their kids, "techy" stuff, church stuff and the good ole days)....accompanied with  hearty outbursts of laughter and plenty 'o good tasting food.  You can also count on a good long hugging session before they say good bye. Renee --a fellow outlaw--says it takes about an hour ...that's not true, Renee....it took 65 minutes this year. :)

On of my favorite times of the Gathering is when the family sings together...accompanied by Alice.  How can one not get a tear as we sing of the Savior's love  and our knowledge that "Families are central to the Creators plan for the eternal destiny of His children."

If you're gonna get older, you can be comforted by sweet children who come home to celebrate "you!" This happened to me.

They arranged a scavenger hunt and took me (literally...we drove around)   down memory lane!

Clue # 1: "The place where you and your sister drove spud trucks in a race."  Oh yah! I  know that place.... Dunrentin Dairy.

This is where I grew up. So many wonderful memories of working here as a family. I was blessed with the best parents in the world and tho 'the place' has lost alot of the TLC it received, I can know that it served it purpose in helping us girdas be what we are.

My kids remember coming here every Sunday night when they were growing up...singing the articles of faith on the way, getting two gallons of fresh "real" milk, pushing the hay up to the cows with Grandpa, the mean rooster, Lucy the horse, frogs croaking in Hillis pond, Grandpa's dog  and having a Schwans pushup. 

Clue # 2:  "Tin roof, underground"  Oh...that's the basement house where  Steve and I  first lived when we moved to Rupert.

Yes, Redge was born when we were living "down under".  I remember Dad let us fix it up so we wouldn't  have to pay rent.   The new carpet was bright red and yellow. I painted my runaway stagecoach painting in here.

The night I delivered Redge we caught 5  mice!  The ruts were so bad up the little lane that our yellow station wagon could hardly make it.  We newly weds were darn  thankful for a place to call home! We lived here 2 years.

Steve remembers when Jack had him drill grain in a field right close.  Steve was excited to "play farmer".  He worked all day at it.  When night came, he got off the tractor.  Dad asked him how much seed he used.  They opened the bin and it was still full.  apparently, it was plugged.  Oops!  

A call from our North Carolina boy:  Mom!  knowing all of you out there....I think I'm homesick.  Go to the well and take a picture and send it to me.

The kids have alot of growing up memories here.  Shay said she wanted to go in there and  see if her name was still written in the cupboard.  I would look at the "post" in the food room where we marked the kids heights, as they grew. 
    You would think the kids would have been glad to move to a bigger better house, but in reality, they loved this place! Memories of having friends over, playing football, mowing the lawn, and "tied up doors" on their downstairs bedroom  on Christmas eve, faking sick on Sunday so they could play Ninetendo, jumping on the tramp, being robbed  and our neighbors nick-names: "Cottom cheese" and  "Jolley ranchers," all make this house the "real one."

       Of course, we had to talk about the time when Chad, using a propane torch, accidently started bushes (close to the house) on fire and found out (for sure) that Heavenly Father answers a little boys prayers.

Clue #4: Old hay derik, a place where G pa Jack's life was saved with a banana creamie, ( BB took him one one while he was on on a tractor on HOT day!), two little boys first experience changing wheel lines using a volkswagon.

  :)  I Got it! it's the Funny Farm!

    Jon  asked:  why that name?  Well, because when G pa Jack bought a farm in the sand..trying to figure how to fertilize and irrigate it was so different than what he was used to...he'd often say..."Gee, this is FUN!" thus...the Funny Farm.

How could work be considered "fun"? If you know Jack Hilterbrand, you know that's what it became...fun.  Fun to see "rob roy" dry roots get a drink...in sandy or clay soil.

We went to Ruby Drive House too...where we lived when we built our current home.  Our first General Authority came to stay there.  I was scared to death.  We planned Shay and Jons wedding.  Chad, only one home then, experienced a Grinchy kind of Christmas.

"a mother's purpose is to care..."

 Dear Kids,

Our new Primary song this month talks about how "a Mother's purpose is to care, prepare, to nurture and to strengthen all her children." 

I want you kids to know that I love my purpose!  I love having the Lord's permission to CARE! about you! (even though you are big and gone) and I will continue to nurture and  pray for you as long as I live...."and beyond."

Just want you to be assured of that!

My Mr. Clean

So I asked Steve to scrub the bathroom floor for me....thinking he would get an old rag, wet it in some pine-sol water, swag it around on the floor a few times and call it good.

I should know better!

He proceeds to get a product that West Coast Paper sells...esp for tile.  He gets a bucket, a scrub brush, knee pads and....lots 'o elbow grease:

Hey...it wasn't THAT dirty, was it?

Well!

See the diff It was!!!! 

Can you see the tile on the right side?  Shining bright and sparkling  clean!   The tile at the top left hasn't been cleaned yet! Can you see the difference?   I just couldn't believe it!  The water was filthy too!

Gosh!  It is so beautiful now...feels and looks so good. Like brand new!  I keep going in there to look at it!

This is so typical of Steve. Everything he tackles, he does  A++++!!!!

I have the best husband in the whole wide world!!!!  Mr. Clean!

Baby Hyrum

Last Sunday, we went to Rexburg to bless our 9th grandchild, Hyrum Samuel Bodily.  It was a perfect day!   Here is the main attraction:

Is this not the most beautiful little guy? ChAnnie are such good parents!  The Barkers shared this special day with us and we had fun saying "which side of the family he looked the most like."  (I love the Barkers, by the way). 

Chad gave Hyrum a lovely blessing. Then we went to Shay and ate some good food and really enjoyed visiting with each other for a few hours.

Redge and Cyndee's family was here (Idaho)  on vacation, so it made it extra special to have all my kids together for a "super Sunday!"  (No, we didn't watch the foot ball game...but Redge sure teased about wanting to do .... all afternoon).

Bean cuisine

Some of you know may know that I recently held  a RS enrichment/activity night called a Bean Cuisine. Forty RS sisters came to my house and we tasted some delicious bean dishes.

  As a preparedness specialist, I felt the desire to encourage the Sisters to cook and use Mr. Bean more in their daily diets and not wait till "crunch time".

I think we all know that it is better to cook , get used to and rotate our long term food storage.  Yes, it lasts 30 years, but so much wiser to rotate these foods into our daily diets, keep the supply fresh and let our bodies  get used to them.  

 I 'm glad I made myself  practice and get ready for this night,  because I can honestly say now, that I'm not as afraid to cook a bean!  Beans  are so healthy for you, and versatile and delicious. 

Oh, I know you're worried about the toots.  Well, did you know that if you rinse your soak water, you'll get rid of alot of that!   So...no excuses. 

The hardest thing about Mr. Bean is that he is not a fast food.  You do have to think ahead.  But if you think ahead and cook him once, you can eat it twice, refried beans, or throw some whole in to your burrito).  They also freeze very well.

 I was especially glad to learn that bean puree can be used as a substitute for fat in some recipes.  I have a fabulous bean blueberry muffin recipe.

Lovely...

You know how you get stuck on a word sometimes and it seems to fit everything?

 Well, mine right now is.... "lovely!" 

I think I got it stuck in my head as I was memorizing the Primary song... I lived in Heaven.  The line is..."My choice was to come to this lovely home on earth...and seek for his light to direct me from birth." 

Well...the Lovely got stuck...it can fit everything...if you want it to...

Of course it depends on  "how you say it. "

Lose your car keys and your running late..... Lovely!

Look out at the river when the sun is coming out and it's kinda foggy..."  sigh...Lovely!"

My speech kid gave me a hug on his last day and said, "I'm gonna miss you Bodily."  Kids really are so sweet and ...L o v e r l y. 

Ateacher asked  me "what was on my glasses"...I take them off and look....a hunk of TP hooked to the nose piece...That's lovely!

Made blueberry bean muffins in preparation for my Bean Cuisine Enrichment tomorrow night (40 woman signed up...coming to my house!), whew...They  turned out Lovely.   

Slipped on an icy sidewalk today and fell all the way down.  I'm sure I looked ...that's right...lovely.

So if you need a word in your head...you can borrow mine.  It's been lovely to chat with you.

Ty Ty

While browsing through some pictures, I found this picture of Ty and I really like it. He has such a "good look" here, don't you think?  Like you could just start talking to him? He's a good daddy and a good husband and a good dentist and a good church worker.  I  like his new glasses, too.  I sure think he's a handsome "hunk of a man." Fun to live by.  Thanks for the movie last night, Ty.
